Alfred Le Fermier – Grand Cru

Description

This cheese proudly bears the name of the grandfather of the cheese maker, Alfred (the farmer) Bolduc.

It is a farm cheese made of organic raw milk, cook pressed cheese, curded on wood board . Its sunset yellow rind has a pleasant wood smell. It stands out mostly by its supple texture and the complexity of  fruit, caramel and honey aromas. Aged for 8-months

The Grand Cru version are aged from 20 to 36 months in a ripening room. This exceptional organic farmstead cheese abounds in complex aromas of sweet fruits, honey and woodsy notes.
