Description
Langres Chalancey is a cow’s milk cheese made in the region of the Champagne Ardenne, France. It is creamy and slightly chalky in the middle and gets runnier as it ages. Not an overly strong cheese, but it does have character and a slight aroma. Not as ‘stinky’ as an Epoisses but does have some similar tones.
A little dent in the top of the cheese is the perfect vehicle for a splash of Champagne if you want to kick things up. Just let it soak in at room temperature before you dig in.
It is a popular while rare cheese, hailing from the same town that brought the literary world the great pen of Diderot. This is much subtler cheese and much more complex. It is sweet and flavorful, with a potent smell. A soft, creamy texture and an aftertaste some have described as soaked in honey and truffles. The dent at the top is due to the tradition of filling up this basin with Champagne prior to eating Langres. Why not? Live it up!
Pair with Champagne or sparkling wine.
