Beemster Extra Old – Gouda

Our Beemster XO XTRA OLD Cheese is the famous Beemster cheese that is aged for 26 months+, as opposed to the 18 month aging process of classic Beemster.

This matured variety features the same sweet caramel sweet flavour, but also develops deep, long-lasting flavours of butterscotch, whiskey and pecan.

The cheese is generally more intense, drier, brittle, crumbly, and grainy in texture, with more crunchy sodium crystals.

Pair with Malbec, Tempranillo.
