These slow-fermented, fluffy, milk buns use a fascinating method to archive their fluffy soft texture. Using what is called the Tangzhong, originating in Japan, flour and milk are first cooked together in a pot until the flour absorbs all the milk and the starches start to gelatinize. This roux is then cooled and added to the main dough. The result is an extremely soft and light, brioche-like texture.
