Sourdough Milk Bun Dinner Rolls
These slow-fermented, fluffy, milk buns use a fascinating method to achieve their fluffy soft texture. Using the Tangzhong, originating in Japan, flour and milk are first cooked together in a pot until the flour absorbs all the milk and the starches start to gelatinize. This roux is then cooled and added to the main dough. The result is an extremely soft and light texture. Perfect for soaking up turkey gravy or a ham sandwich.
